I make Lemon Curd, and Lime Curd, and at this time of year Cramberry Curd also, I make mine in 120kg batches using fresh eggs and unslated butter, sugar and whole Lemons simply liquidised, it tastes fantastic, and is very fattening. I make fudge too !
